Black Tea In China

The originator of black tea is in China. The earliest black tea in the world was invented by tea farmers in the Wuyishan tea area in Fujian during the Ming Dynasty in China, and it was named " Lapsang souchong". The Jiang family in Tongmu Village, Wuyishan City, is a tea family that produces Lapsang Souchong black tea, with a history of more than 400 years.

During the processing of black tea, a chemical reaction centered on the enzymatic oxidation of tea polyphenols occurs. The composition of fresh leaves changes greatly, and the tea polyphenols are reduced by more than 90%, resulting in new components and aroma substances such as theaflavins and thearubigens. It has the characteristics of black tea, red soup, red leaves, sweet and mellow. The most famous black tea varieties are Qimen black tea.

Black tea is a fully fermented tea. It is a tea made from suitable tea tree cinnamon leaves as raw materials and refined through a series of processes such as withering, rolling, fermentation, and drying. Withering is an important process in the initial production of black tea, and black tea is called "black tea" in the initial production. Black tea gets its name because the tea soup and leaf background of the dry tea are red. Chinese black tea varieties mainly include: Rizhao black tea, Qihong, Zhaopinghong, Huohong, Dianhong, Yuehong, Quanchenghong, Suhong, Chuanhong, Yinghong, Dongjiang Chuyunxian black tea and so on.
