The Drying Process Of Different Tea Leaves

There are three types of tea drying process: drying, frying drying and sun dried. Common tea drying processes are as follows:

Green tea drying process is generally first drying and then frying drying. Because the tea leaves after kneading still have a high water content, if they are directly fried, they will quickly form agglomerates in the pot of the frying dryer, and the tea juice will easily stick to the wall of the pot. Therefore, the tea leaves are first dried to reduce the water content to meet the requirements of pan frying.
Black tea drying process is the process of roasting the fermented tea blanks at high temperature to quickly evaporate the water and achieve the dryness with good quality.

There are three purposes: use high temperature to quickly inactivate the activity of enzymes and stop fermentation; evaporate water, reduce the volume, fix the shape, keep dryness to prevent mildew; emit most of the low-boiling point grass odor, intensify and retain high-boiling point aromatic substances, obtain The unique sweet aroma of black tea. 
 
White tea is a specialty of China, mainly produced in Fujian Province. White tea is made by drying and drying without frying or kneading.
