Generally, fresh leaves cannot be processed immediately after being picked, and need to be spread for a period of time. This process is the withering of fresh leaves. After the fresh leaves are accepted into the factory, they should be spread separately according to variety, place of origin, picking time, and fresh leaf level. The thickness and time of spreading varies with the variety and tenderness of fresh leaves, production season, processing tea, processing environment and tea area. For example, bulk fresh green tea leaves are spread out with a thickness of 15-20cm, about 20kg/m2, and the time is generally within 12 hours. During the spreading process, the leaves should be turned appropriately to dissipate heat. Famous green tea fresh leaves, the thickness of the spreading leaf is generally 2~3cm, about 1kg/m2, and the spreading time is generally 6~8h. The rainwater leaves should be extended appropriately, and the leaves should be turned appropriately during the spreading process, but pay attention to lightly turning and mixing. . As far as the production season is concerned, in spring, the temperature is low and the humidity is high, and the fresh leaf spreading time can be appropriately longer, while the summer and autumn temperature is high and the humidity is low, and the fresh leaf spreading time can be suitably shorter. As far as the tea area is concerned, generally the southern tea area has a high moisture content in fresh leaves and the spreading time should be longer, while the fresh leaf moisture content in the northern tea area is lower and the spreading time should be shorter.

After the fresh leaves are spread, the quality of the leaves becomes soft and emits a delicate fragrance. Generally, the moisture content reaches about 70% (the weight loss rate is about 15% to 20%), which is moderate, and can enter the next process.
