Why Green Tea Need Fixation?

Green tea needs fixation to prevent oxidation, which is the process that turns tea leaves brown and gives black tea its distinctive flavor. By applying heat to the tea leaves, the enzymes responsible for oxidation are deactivated, preserving the green color and fresh, vegetal flavor of green tea.  

Here are the specific reasons why fixation is crucial for green tea:

  1. Preserving Green Color: Oxidation causes the tea leaves to turn brown. By inactivating the oxidation enzymes, fixation ensures that the tea retains its vibrant green color.  
  2. Maintaining Fresh Flavor: Oxidation can lead to the development of bitter and astringent flavors. Fixation helps to preserve the delicate, grassy, and often slightly sweet taste profile of green tea.  
  3. Preventing Fermentation: Green tea is an unfermented tea. Fixation stops the fermentation process, which would otherwise transform the tea into a darker, more oxidized type like oolong or black tea.  

The fixation process can be achieved through various methods, including steaming, pan-firing, or microwave heating. The specific method used depends on the type of green tea being produced and the desired flavor profile.
