Yes, matcha is made from green tea leaves.

 

Matcha undergoes a rigorous and unique production process, and its raw materials and processing flow distinguish it from regular green tea and green tea powder:

Raw Material Selection and Treatment

Matcha is typically made from specific varieties of green tea plants (such as Yabukita and Uji varieties in Japan). Approximately 20-30 days before harvesting, tea farmers cover the tea plants with shade nets. This process reduces the production of tea polyphenols while increasing the content of chlorophyll and amino acids (especially theanine), giving matcha its bright green color and fresh, sweet taste.

Processing Flow

  1. Freshly picked tea leaves are immediately subjected to steam fixation, which quickly stops the fermentation process and retains the natural pigments and active substances in the leaves to the greatest extent.
  2. After fixation, the tea leaves are cooled, dried, and other steps to form dried tea, known as "aracha".
  3. Subsequently, "aracha" is stripped of stems, stalks, and old leaves to obtain pure tea raw material called "tencha".
  4. Finally, "tencha" is ground into an extremely fine powder using a special stone mill (or a high-end grinder that meets standards) — this is matcha.

It should be noted that matcha is not simply ground green tea powder. Its core characteristics lie in the special cultivation of raw materials and specific processing techniques (especially steam fixation and fine grinding).
